Neil made what is I guess ubiquitous left over turkey soup tonight. I never even thought of making a broth with a cooked turkey - back in the day it went to the dog, as an adult - into the garbage. Not this time, last night into a pot with some mirepoix just like you would a chicken.
Tonight added all sorts of veggies: white beans, carrots, parsnips, Chinese cabbage, mushrooms - more Im sure. I thought it was really good and will happily eat it the next few days.
